Vanilla Risotto with Griddled Nectarines
Serves 4 - Dairy free/Vegetarian
Ingredients
- 1 ltr (¾ pints) Alpro soya Dairy Free Milk Alternative to Milk
- 1 Vanilla Pod, split
- 175g (6oz) risotto rice
- Zest and juice of 1 large orange
- 45ml (3tbs) clear honey
- 4 small ripe nectarines
- 115g (4oz) raspberries
Directions
Pour Alpro soya milk alternative into a pan and add vanilla. Bring slowly to the boil and remove from heat.
Place orange zest, juice and 30ml (2tbs) honey into a shallow pan and stir over a medium heat for 1 minute.
Add rice and stir until coated in the orange mixture.
Add hot vanilla-infused Alpro gradually, stirring constantly until all the liquid is added and absorbed and the rice is just tender (this takes about 20-25 minutes.)
Heat a griddle pan until really hot. Brush the nectarine halves, cut side, with the remaining honey. Place cut side down into the pan and cook for 3 to 4 minutes each side.
Serve the risotto in individual serving bowls, top with griddled nectarines and scatter over the raspberries.
