Quick Cherry Loaf
Wheat free/Egg free/Vegetarian
Ingredients
- 250ml (8 fl oz) milk
- 125g (4 oz) glace cherries
- 123g (4 oz) soft brown sugar
- 250g (8 oz) wheat free self raising flour
- 1 tsp mixed spice
- cherries and walnuts (optional) for decoration)
- honey to glaze
Set the oven to Gas Mark 4 or 180°C / 350°F.
Prepare a 500g (1lb) loaf tin, by lightly greasing it and lining the base with greaseproof paper. Place all the ingredients, except the decoration and glaze in a bowl and mix well. Smooth out the top. Decorate with cherries and walnuts.
Bake for 1 hour
Allow to cool, then turn out. Brush with honey and serve in slices spread with butter or margerine. (to be honest we eat it without butter as its just as nice and is fewer calories!)
