Chocolate Brownies

Ingredients

Preheat the oven to moderate, Gas Mark 4 or 180°C/350°F.

Directions

Sift together the flour, cocoa powder and baking powder. Cream the butter and sugar together until fluffy. Beat in the vanilla, then the eggs. Fold in the flour mixture and mix well. Spoon the batter into a well-greased 20cm/8in square baking tin and put into the preheated oven. Bake for 30 minutes or until firm. I always take them out just as they start to get firm, this stops them going too dry and keeps them moist. Cut into squares to serve.


You can vary this recipe and make Chocolate Nut Brownies by adding 50g/2oz chopped walnuts and adding at the stage of folding in the flour to the rest of the mixture.
