Broad Beans with Pasta
Serves 3 - Wheat free/Vegetarian
Ingredients
- 1 Kg (2 lb) broad beans (fresh or frozen)
- 125g (4 oz) mushrooms, chopped
- 440g (14 oz) tomatoes, chopped
- 560g (18 oz) wheat free pasta, cooked and drained
- 60g (2 oz) Parmesan cheese, grated
- 2 tbs oil
- 1 tsp parsley
- salt and pepper to taste
Heat the oil in a pan and cook the broad beans for 10 minutes. Add the mushrooms and tomatoes and cook for a further 10 minutes. Add salt, pepper and parsley. Mix with the pasta, sprinkle with cheese and serve.
